The Glucose Absorption Mechanism
Carrageenan and fucoidan — the primary polysaccharides in sea moss — form a viscous gel when they contact water in the digestive tract. This gel physically coats the small intestinal lining, slowing the absorption of glucose across the intestinal wall. The result is a lower and more gradual rise in blood glucose after carbohydrate-containing meals — reducing the glycemic load without changing the glycemic index of the food itself. This is the same mechanism by which psyllium husk (the active ingredient in Metamucil) reduces post-meal glucose spikes, and by which oat beta-glucan received FDA qualified health claims for blood sugar management.
Fucoidan and Insulin Sensitivity
In animal studies, fucoidan has demonstrated the ability to upregulate GLUT4 transporters — the glucose transporter proteins that insulin activates to move glucose from blood into muscle cells. Greater GLUT4 expression means more efficient glucose uptake at a given insulin level, effectively improving insulin sensitivity. Human clinical data is limited; this finding should not be extrapolated to a claim that sea moss "treats insulin resistance." But the mechanism is plausible and the early research is promising.

If you take metformin, insulin, glipizide, or any blood sugar medication: sea moss fiber can reduce glucose absorption. Combined with medication that already lowers blood glucose, this can drive blood sugar too low (hypoglycemia). Symptoms of hypoglycemia — shakiness, sweating, confusion, rapid heartbeat — can be dangerous.
